With Christmas just a week away, it is cookie baking time! There are as many Christmas cookie recipes out there as there are shopping mall Santas, but these Pecan Crescent cookies are my favorites – at this time of year and all year. These cookies are super-easy to make and look festive, because the powdered sugar coating looks like a dusting of fresh snow. Since they don’t say “Christmas” too specifically, they make a great holiday treat for people of every religion. Most importantly, they taste delicious!
PECAN CRESCENT COOKIES
1 cup whole pecans
1 cup flour, unsifted
2 tablespoons sugar
1/2 cup butter, softened
1/2 teaspoon vanilla
Powdered sugar, plenty
Preheat oven to 300°F.
Chop pecans finely and set aside.
With the mixer on slow speed, mix flour, sugar, butter and vanilla until blended. Add chopped pecans.
Shape the dough into crescent shapes and place them on an un-greased cookie sheet. Bake for 40 minutes.
Remove from pan to rack placed on paper towels. When cookies are cool, sprinkle with powdered sugar.
