Pumpkin Beef Chili
Yes — you read that right! One of my favorites is pumpkin beef chili. If this dish doesn’t say fall, I don’t know what does. Remember, you can always substitute beef for ground turkey if (like me) you try to avoid red meat. Just mix the ingredients, stir and pour into a crockpot and you’ll have a filling warm meal in no time.. French Onion Soup
An absolute classic! French onion soup is one of my ultimate comfort foods. It gives you the “warm fuzzies” and you can even make it as healthy as you choose (a very difficult choice!). This recipe from The Kitchn will send you on a mental vacation right to France. Don’t forget to have a great baguette & cheese for serving!
Say goodbye to time consuming lasagna! The slow cooker (yet again) comes to the rescue for this fantastic dish that is ideal for leftovers. This one requires a bit of pre-cooking for the meat, unless you choose to go vegetarian or use soy grounds to make it a bit healthier.
